I have been craving macaroni and cheese lately and had some at Chicago Diner a couple of weeks ago. As I was eating it, I thought, “I could do that.”
The hardest part was waiting for the water to boil for the whole wheat pasta because my stove is 30+ years old. For the sauce I melted some Earth Balance, a TB or so of whole wheat flour, some coconut milk, and Daiya cheddar. I just guessed at the amounts and it came out great.
Yes I ate the whole bowl.

I love mac ‘n’ cheese. There’s nowhere here to go out @ eat it so I always make my own, I love the cheesy sauce in Veganomicon & the New Farm recipe.
